The Fruits of our Labor - 2012 (Harvests #3)

"There is nothing more exciting and happy moment than when you see your plants growing and bearing fruits after lots of hard work everyday in our country living."

THE CORN FIELD (before)

THE CORN FIELD (now)

video

THE HARVEST TIME
It’s harvests time.  The Great Gardener has decided to harvest the corn.  We are really excited to harvest our fruits of our labor.  It’s a lot of job, but it’s worth it.

THE GREAT CORN HARVESTS
We were able to harvests 3 wheel barrows full of corn.  That’s a lot for us to save food for the coming winter.  Last year, our corn field was damaged and it was really devastating for the Great Gardener that no corn was harvested. This year is really a blessing, an overflowing abundance of God’s goodness and mercy to us.  Thank God!

THE CORN FIELD (after the harvests)
After the harvests, another lot of work has to be done.  We piled up all the corn stalks in one area and saved them.  The Great Gardener will use them as compost for the next planting season .

THE GOOD CORN ON THE COBS
We separated the good ones from the bad ones. Some were infested with worms and we have to save what we can save. Next year, the Great Gardener is going to find ways how to control these ear worms. Though it’s not 100% good harvest, we still feel blessed and happy that we harvested something this year than nothing at all.  *Corn has high level of antioxidants that actually increases when you cook it, but it loses its Vitamin C rapidly.  Its antioxidants come from ferulic acid which has been linked to cancer prevention.  It is high in niacin and potassium and also a good source of magnesium and essential fatty acids.  Its lutein and beta carotene levels have been linked to cognitive brain function retention.

It's really very useful to have a Food Saver Machine because we use this to store these corns on the cobs after blanching them.  In this way, they can be stored in the freezer for longer period of time. They still remain as fresh as it was initially harvested even when cooked in a microwave.  So sweet taste,  "you've got to have it"- is the name of this corn variety we bought.

HARVESTING THE CORN FOR CANNING

THE CANNED WHOLE KERNEL CORN
It's canning time! Out of the harvests we got, we were able to can 18 quart jars of corn.  We used the raw pack method of canning these corns. It’s a lot of job, but we have to do it.  We don’t want to waste these corns. But in due time, if we have a good and bigger harvest than this year, we will try to sell them in the market. We had a taste of our corn cobs during our dinner last night.  It was so sweet, juicy and delicious especially with butter, salt, and pepper.  We still have 77 pieces of corn cobs left that we blanched and kept them in our chest freezer. Please don't forget to write the date on top of the lid when you can your own whole kernel corn.

Mom's Oven --- Double V Hamburger Patties (Venison Recipe)

The Trapper got lots of venison meat.  When I think of making a food recipe, it should be different from others.  Being healthy wise and saving wisely is my personal motto.  Anything that we eat should have nutritional value to supply our body needs.  Anyone doesn't like to get sick because it is expensive to get sick, especially if one has no health insurance.  To avoid this, we need to be conscious of what we are eating.   To have a better health, we can simply form an equation and it will look like this -- vegetables + fish + source of carbohydrates + fruits + (meat - free cholesterol) = healthy, balanced diet.

Golden Egg Summer Squash Plants

Saffron Summer Squash Plants

Zucchini Plants

THE CUCURBITACEAE FAMILY
(Saffron, Golden Egg, and Zucchini)
They are *low in calories and  high in Vitamins A, folate, and potassium that can help protect from heart disease and stroke and maintain healthy blood pressure.  Its fiber also helps promote colon health and cancer prevention.   It also contains Vitamin C and lutein which is excellent for the eyes and helps to reduce bruising.

DOUBLE V HAMBURGER PATTIES
We  enjoy having hamburger sandwich at McDonald, but we can also do our own home-styled venison hamburger with this delicious, juicy, healthy, and nutritious recipe.  This is an easy-to-make ground venison recipe mix with all the fresh vegetables (the Cucurbitaceae family) from our garden. You can store some leftovers of the cooked patties in the freezer. After thawing, you can reheat them in a microwave for  30 seconds and they will still taste delicious, tender, and juicy as they were first made.

Ingredients:
1 lb     ground venison meat

1/8 c   golden rgg summer squash, diced small

1/8 c   saffron summer squash, diced small

1/8 c   green zucchini, diced small
1pc     small onion, diced small
1 pc    whole garlic, minced
1 tsp   5th Season Italian Seasoning
½ tsp  ground pepper
½ tsp  Tony Chachere's Original creole seasoning
1 tsp   salt
¼ c     Heinz Tomato Ketchup
1 can   no stick cooking spray

Preparation Time:  approximately 30 - 40 minutes

Cooking Time:  6 minutes (2 minutes for every 4 patties grilled)

Instructions:

1. Before cutting, wash thoroughly all the vegetables with a fruit and vegetable wash and rinse well. Cut and diced small the onions, golden egg, saffron, and zucchini. Measure 1/8 cup of each vegetable.

2. Combine all the ingredients and mix well.  Use a 1/3 cup for making small patties. Flatten each patty before putting in a grill.

3. Spray the electric grill with no stick cooking spray before preheating it.

(Note: I used a small electric grill.  If you have an outdoor grill, that is fine, too.)

4. Put 4 hamburger patties on the grill.  Cook for 2 minutes only. If there are leftovers, you can freeze and store them in a food saver bag.

Yield:  12
