Mom's Oven --- All Summer Squash Mini Bread

Vegetables are not only for cooking, but also for baking.  It's not only healthful and beneficial to bake a bread mixed with vegetables, but it also helps you save money and provides your family a kind of bread that is different from other breads being sold in the grocery store. That's something cool, isn't it? (-.-)

They are rich in *Vitamin A , folate, potassium, and fiber that makes heart healthy as well as colon healthy and has been linked with cancer prevention.  They contain Vitamin C and lutein which is excellent for the eyes and helps to reduce bruising.

It’s good to start your day with a good breakfast by having this tasty, nutritious bread to go with your favorite coffee or tea.  As compare with other breads, this is no-ordinary bread. This bread recipe contains the nutritious vegetables mixed together to provide vitamins, nutrients, and anti-oxidant benefits necessary to maintain your good health. Be health conscious about everything you eat. It’s what you eat that makes you look good and feel good. Give it a try.

½ c     saffron summer squash, chopped
½ c     golden egg summer squash, chopped
½ c     zucchini summer squash, chopped
2 c      all-purpose flour
2 tsp   baking powder
¼ tsp  salt
1 tsp   McCormick cinnamon
1 ½ c  granulated sugar
2 pc    egg
¼ c     corn oil
2 tsp   vanilla extract
1 c      Fisher chopped walnuts (optional)

Preparation Time: approximately 30 – 45 minutes

Baking Time:  20 minutes

1. Preheat oven to 350 degrees.  Grease a mini bread pan.
2. Wash the vegetables with fruit and vegetable wash and rinse thoroughly.  Cut and put them in a food chopper.  Set aside. Prepare the other ingredients.
3. Stir together flour, baking powder, salt, and cinnamon in a large bowl.  Mix well.
4. Beat together sugar, egg, corn oil, and vanilla extract in another large bowl.
5. Add the dry ingredients to the liquid ingredients and stir until just moistened.
6. Gently fold in the vegetables and chopped walnuts (optional).
7. Pour batter into prepared pan. Bake 20 minutes or until a wooden pick inserted in center comes out clean.
8. Let the pan cool on wire rack for 10 minutes; turn out onto wire rack, and let cool completely.  If there is a leftover, you can freeze and store it in a food saver bag.
Yield – 8 mini breads
