Mom's Oven --- All Summer Squash Pizza


Having fresh vegetables from the garden and cooking them at once is really a healthy option to do.  All the nutritional benefits provided by each vegetable we gather are well appreciated on the table.  Aside from this, we don't need to buy these vegetables in the grocery store.  It's being healthy wise and saving wisely at the same time.

They are *low in calories, but high in Vitamin A and C that can help protect from heart disease and stroke and maintain a healthy blood pressure. Its fiber also helps promote colon health and has been linked to cancer prevention.  It also contains Vitamin C and lutein which is excellent for the eyes and helps reduce bruising.

ALL SUMMER SQUASH PIZZA
Almost everybody loves to eat pizza. It’s a cool thing to make your own pizza.  Making my own pizza has never been so hard with this easy recipe I prepared. In addition, I have this mini electric cooking appliance named, Xpress Redi Set Go, that is really so easy to use and easy to clean.  I don't have to use my oven to cook these few tortillas.  Enjoy this delicious, nutritious, and crispy pizza on your table.

Ingredients:
1 c.     mixed summer squash vegetables  (diced)
1c.      Kraft Mozzarella w/ Philadelphia cream cheese
1 bot. 24 oz. Ragu super chunky mushroom sauce (2 tbsp / pizza)
4 pc.  small Mission flour tortilla (20 ct)
1 pc.  small onion (diced)
4 pc.  precooked bacon (1 pc / flour tortilla)
          Italian seasoning
          basil leaves
          ground pepper
          no-stick cooking spray
          Xpress-Redi-Set-Go cooker or any non-stick cooking pan

Preparation Time:  30 minutes

Cooking Time:  5 minutes / pizza

Instructions:
1) Spray the appliance with no stick cooking spray before  preheating it.  Plug in and set the timer to 10 minutes for      preheating.
2) Set one piece of flour tortilla on a plate.  First, spread 2 tbsp of Ragu sauce and then ¼ cup of mixed summer squash vegetables and some onion on top of it.
3) Cut one precooked bacon into small pieces and spread it over. Top with ¼ cup of mozzarella cheese.
4) Sprinkle a dash of Italian seasoning, basil leaves, and ground  pepper on top of the mozzarella cheese.
5) Set  the prepared pizza on the electric cooker, cover it, and set  the timer for 5 minutes.  
6) While it is cooking, prepare another flour tortilla on a plate.   Do the same procedure from 2 to 4 until the timer rings.  Remove the cooked pizza and put on a serving plate. Then set  the prepared pizza on the cooker and set again the
timer for 5 minutes. Do the rest. Serve while it is hot.
